The award-winning Edinburgh events kitchen is now in cahoots with chef Mark Greenaway, who – as well as running his acclaimed eponymous restaurant in the capital – is an ambassador for Scottish food and a regular face on TV.

After meeting with the bigwigs at Appetite Direct, Mark set about designing a unique list of signature canapés for them that portrayed the style of food that he is known for. Using local ingredients, classic flavour combinations and techniques, he brings the mini treats up to date with current and playful twists for the modern palate.

Forget about pallid, lukewarm mini quiches: the bite-size delights on the menu include tomato tartare with pickled shallots and crispy rice and beetroot [pictured above] and whisky-cured halibut fillet, with sesame seed and potato tuile, caviar and creme fraiche. Mark’s hallmark is his desserts, so those with a sweet tooth will be in heaven – think peanut caramel cheesecake lollipop with salted caramel [pictured below] and dehydrated pistachio sponge with candied kumquat and chocolate jelly (*stomach makes loud rumbling noise*).
