New on the Scottish wedding scene, YiShi Cake talks us through her bespoke wedding cakes which include gourmet flavours, edible lace and incredible fondant structures

With a unique approach to her craft, Denise – the talented baker behind YiShi Cake – sees a wedding cake as an extension of a love story. She works with every couple to create a bespoke design that truly captures their personality and wedding theme.

Here, we chat to Denise about how she got started with YiShi Cake, the inspiration behind her designs and what couples can expect when getting a wedding cake from her...
YiShi Cake
Denise explains how she got started with YiShi Cake, and grew the award-winning business from a passion-project: "My cake journey began like many other loving mothers – simply hoping to give the very best to their children.
"What started as a heartfelt gesture soon became a form of creative therapy, and I found myself completely immersed in the artistry of cake design.
But Denise didn't jump straight into making wedding cakes, instead taking her time to hone her craft.
"I’ve long dreamed of creating elegant, timeless wedding cakes, but in the early days, I didn’t feel ready – I never wanted to risk someone’s once-in-a-lifetime celebration without the experience to truly honour it.
"So I began with children’s cakes, treating each one with the same precision and care I would give to a wedding cake.

"I’ve always had a deep love for art and storytelling through design, and have been drawn to beautiful things – sculpture, textiles, architecture and nature. Cake, unexpectedly, became the perfect canvas as it is where creativity and craft could come together in the most meaningful way."
"Over time, my skills evolved, and so did my vision. Today, I’m proud to bring that same passion and artistic integrity to both joyful celebration cakes and timeless wedding creations."
Unique bespoke wedding cake design in Scotland
Although your wedding cake is one of the perishable elements of your special day, Denise believes that it holds a special place in the memory of your wedding describing it as: "a timeless statement that lingers long after the last slice, capturing the essence of a moment destined to be remembered."
It's for this reason that so much time and care is taken with each design. In fact, no two creations at YiShi Cake are the same – every detail is thoughtfully bespoke, resulting in a piece that feels deeply personal and undeniably unique.

The inspiration behind YiShi Cake
Denise explains: "My inspiration comes from a blend of art, fashion, architecture, and nature – anything with form, texture, and emotion. I’m especially drawn to sculptural lines, delicate layering, and soft, romantic detailing.
"Often, it’s a fabric swatch, a vintage floral arrangement, or even the architecture of a venue that sparks the creative process. I also find great inspiration in the couple themselves – their story, style, and how they envision their celebration.
"Every cake begins with a mood or feeling I want to evoke. Whether it’s understated elegance or bold modern romance, I design with intention – so the cake becomes not just part of the wedding, but a meaningful reflection of it."
Romantic wedding cakes inspired wedding details
As well as YiShi Cake blurring the line between dessert and design, there is a huge focus on capturing each couples' story; reflecting their personalities, wedding theme and emotions.
Explaining how this comes together, Denise tells us about a recent stand-out cake. "The four-tier creation was inspired by a bridal gown for a romantic celebration at The Signet Library.
"The bride gave me full creative freedom, which allowed me to experiment with edible lace, wafer paper florals, and intricate detailing that mirrored the delicate craftsmanship of her gown by Berta at Opus Couture. It was an absolute dream to bring to life."

Wedding cakes that represent your love story
Talking us through another YiShi Cake design, Denise explained how she was inspired by one couple's venue, and outfits, and worked this into her plans for the cake.
"It was a contemporary design for a Scottish castle wedding, featuring cascading ruffles in soft ivory and dove grey – crafted from wafer paper to echo the tones of the couple’s attire," Denise says.
The bride had told Denise 'we waited our whole lives to find each other,' and this inspiration was also incorporated into the cake.
"It meant the world to create something that symbolised their story," Denise revealed.
"When couples place their trust in me to design freely, it opens the door to something truly personal – where understated elegance speaks volumes about their love."
Gourmet wedding cake flavours
While many couples still choose classic flavours to suit their guests’ preferences such as vanilla and chocolate, there’s a growing trend towards more unique flavour combinations.
Denise reveals that couples are currently looking for refined flavours, unexpected pairings, less sweetness and healthier alternatives.
This doesn't mean compromising on the taste though, as the flavours on offer at YiShi Cake include Jasmine white chocolate matcha, Earl Grey espresso, pistachio cream cheese, chocolate, dark chocolate, salted Oreo, and more delectable choices.
Can I have different flavours in each tier of my wedding cake?
Denise understands that choosing the flavours can be the hardest choice, and allows her clients the freedom to mix and match flavours.
"Many couples choose a different flavour for each tier, and it’s a wonderful way to offer variety for your guests."
Clients can even alter the flavour and sweetness level to suit their preferences.
The wedding cake process
Your journey with YiShi Cake begins with an enquiry. Once availability is confirmed, you’ll be invited to a complimentary discovery call to explore services, address frequently asked questions, and receive an average cost estimate tailored to your vision.
You can then enjoy a cake tasting box delivered to your door – a chance to sample signature flavours before booking.
Once your date is secured, YiShi Cake will begin the design process with digital sketches and a personalised consultation to go over every detail, from flavours and finishes to decorative elements and styling, all tailored to your preferences.
Finally, YiShi cake will confirm the logistics and coordinate with your venue and vendors to ensure everything runs seamlessly. On the day, the experts will arrive early to set up and perfect your cake display – so all you need to do is enjoy the celebration.
How much does YiShi Cake's designs cost?
Each piece is individually priced based on the serving size, design, flavours and decorations.
However, there are three main collections to give a starting point on the design, ranging from a Swiss Meringue Buttercream cake with fresh flowers to handcrafted fondant designs with wafer flowers and edible mediums.
There is also a VIP service package which includes delivery and set up, a cake stand, table stylings and more.
2025 and 2026 wedding cake trends
Weddings in 2025 and 2026 are all about the bespoke elements and putting your own stamp of things. Whether that's having your wedding date embroidered on your suit jacket or veil, custom-made signage or a signature cocktail.
And with YiShi Cake, you'll have more control over your wedding cake than just choosing the flavour and colour scheme.
